Almond Flour Oatmeal Cookies
A healthy cookie? Seriously? Yes, I do believe I’ve discovered it.
The Story
These can serve as breakfast, afternoon snack, or an evening treat with a cup of tea while watching Netflix. Satisfying and healthy in any situation. No refined sugar, no butter and no egg, unless you choose to use them (I use the egg). No white or wheat flour, unless, again, you choose to use them (I prefer to use a small amount of whole wheat flour, but it’s not much). And, sure, you could use chocolate chips if you want, but I prefer raisins.
These are also the fastest cookies I’ve ever made. Once you know it, you’re looking at maybe 35 minutes from carnal desire to cookie fulfillment. No mixer required. Two bowls, one of which you can just rinse out because it just holds the dry ingredients.
I make them with coconut oil, a real egg, the whole wheat flour, plus all the listed optional ingredients. Yes, I do like to add a pinch of hot ground pepper. I think that kicks the taste bud party up a notch.
After trying a few internet recipes that are roughly adjacent to this, I am ready to offer my own approach. Enjoy!
The Recipe
Tom’s Almond Flour Oatmeal Cookies
Makes about 20 2” cookies.
Preheat oven to 350 degrees. Line cookie sheet with parchment paper (if you’re lazy like me).
Combine dry ingredients in a bowl. In a separate mixing bowl, whisk the oil or butter egg and vanilla extract. Mix in a third of the dry ingredients with a spoon. Add a few tablespoons of the maple syrup and mix. Add another third of the dry ingredients and additional syrup as desired. Add the rest of the dry ingredients, adjusting sweetness with the maple syrup as desired.
Form balls with dough, place on cookie sheet and flatten slightly with a fork. Bake for 15-18 minutes.
Dry Ingredients – Required
1 ½ cups almond flour
1 ½ cups quick oats
½ teaspoon salt
½ teaspoon ground cinnamon
½ teaspoon baking powder
¼ teaspoon baking soda
Dry Ingredients -- Optional
½ cup whole wheat flour
1 teaspoon ground ginger
Pinch of nutmeg
Pinch of ground hot red pepper (cayenne, chipotle, etc.)
½ cup raisins
Wet Ingredients
½ cup coconut oil or unsalted butter, melted
¼ cup maple syrup, or to taste
1 real egg or flax egg
1 teaspoon vanilla extract
